In this exclusive dinner, distinguished chefs Jenny Flynn from Faithlegg Hotel and Brian Deegan from La Cala Resort have outdone themselves in creating a singular menu that showcases the culinary talent and exquisite products of both countries. Chef Brian Deegan, originally from Dublin, will present a menu that captures the authentic Andalusian essence, while chef Jenny Flynn will infuse her expertise to bring the vibrant essence of Waterford to each dish.
An evening of culinary delights
The terrace of the restaurant at La Cala Resort will be the setting for this splendid evening, which will begin at 19:30 with a special cocktail and a welcome greeting. The seven-course menu will harmoniously fuse the flavors of Spain and Ireland. The exquisite dishes to be served include:
– Mar Azul: a tomato salad with Irish apple, created by Brian Deegan.
– Scallop with Riofrío caviar, cauliflower, and plankton beurre blanc.
– Almadraba tuna with organic lentils, baby spinach, and roast juice.
– Irish Skeaghanore duck with sea salt, wild garlic powder, vegetables, star anise, and orange juice, created by Jenny Flynn.
– A selection of Spanish and Irish cheeses.
– Dark chocolate dessert with caramel jelly, Irish yogurt, and rosemary sorbet, a creation of Jenny Flynn.
– Barry’s Tea Fudge, the final touch by Brian Deegan.
Each dish will be paired with selected Spanish wines, including Augustus Trajanus, Bestué Chardonnay Barrica, Lucio Tinto Ronda, and Maestro Viña Axarkía. The evening will be enhanced by a classical string quartet, whose elegant melodies will further elevate the experience.
