2024 marks a year of double celebration for the Irish company FBD Hotels & Resorts, with La Cala Resort on the Costa del Sol reaching 35 years in operation and Faithlegg in County Waterford (Ireland) commemorating its 25th anniversary. To mark this significant occasion, both resorts will come together for a special event on June 29th, bringing to life the “4Hands Dinner.”
An exclusive gala dinner where chefs Jenny Flynn from Faithlegg Hotel and Brian Deegan from La Cala Resort will join forces to create a unique menu showcasing the talent and products of both countries.
Brian Deegan, a chef born in Dublin, will design a menu that reflects Andalusian authenticity, while Jenny Flynn will bring the essence of Waterford through her creations.
The chosen venue will be the Terraza Restaurant at La Cala Resort, which will open the festivities at 7.30 pm with a special cocktail and welcome greeting. The evening’s menu will feature seven dishes that blend the flavors of Spain and Ireland. The delights to be served include:
- Mar Azul: a tomato salad with Irish apple created by Brian Deegan.
- Scallop with Riofrío caviar, cauliflower, and plankton beurre blanc.
- Almadraba tuna with organic lentils, baby spinach, and roast juice.
- Irish Skeaghanore duck with sea salt, wild garlic powder, vegetables, star anise, and orange juice, created by Jenny Flynn.
- A selection of Spanish and Irish cheeses.
- Dark chocolate dessert with caramel jelly, Irish yogurt, and rosemary sorbet, crafted by Jenny Flynn.
- Barry’s Tea Fudge, a final creation by Brian Deegan.
Each dish will be paired with selected Spanish wines, including Augustus Trajanus, Bestué Chardonnay Barrica, Lucio Tinto Ronda, and Maestro Viña Axarkía. A classical string quartet will enhance the dinner with elegant melodies.
